Ximena N. Beltran Quan Kiu is a writer based in Chicago. As a Mexican immigrant woman, she writes about things she finds interesting (like why people put up with their version of the food Nazi) and stories that allow her to explore her identity. Her work has appeared in New York, Vice, Bitch, Food & Wine, Entrepreneur, Munchies, The Independent and more. She's a graduate of DePaul University's journalism program who went into public relations but found her way back home. Beltran Quan Kiu is the founder of C1 Revolution, a communications consultancy.
